Meatless Monday: Veggie Bowties with Asparagus, Baby Bellas, and Marinara Sauce

Welcome to another Meatless Monday. Today I have a yummy pasta dish inspired by Gina, from SkinnyTaste. I changed up the type of pasta and cheese to meet my kids’ approval. They have a recent obsession for pastas that have 1/2 or full servings of vegetables already in the pasta.

Veggie Bowties with Asparagus, Baby Bellas, and Marinara Sauce:

Ingredients:

  • 8 oz pasta (we used Barilla Veggie Farfalle—also known as Bowties)
  • 1 bunch thin asparagus, tough ends removed
  • 6 oz Baby Bellas, sliced
  • 1 1/2 cups homemade marinara sauce (recipe below)
  • 1/4 cup grated Parmesan, Romano, and Asiago cheese (we use the Kraft blend)
  • Crushed Red Pepper to taste
  • Mrs. Dash Garlic & Herb and pepper to taste

Directions:

Boil about 4 inches of water in a large pot, when boiling add asparagus and cook about 2 to 3 minutes, or until tender crisp. Drain and chop into small bite sized pieces.

Quickly sauté sliced bellas in PAM (olive oil kind).

Meanwhile, bring a large pot of salted water to a boil (you can use the same pot from the asparagus not to dirty too many dishes). Cook pasta according to package directions for al dente.

While pasta is cooking, in a medium saucepan heat 1-1/2 cups marinara sauce. Drain pasta and RESERVE a cup of the pasta water.

Return pasta back to the pot and toss with marinara, asparagus, bellas, grated cheese, salt and pepper and a 1/4 cup of the pasta water or as needed to loosen the sauce.

Divide between four bowls and top with fresh pepper and more grated cheese if desired.

*Note: If you want to dine using this on meat days, add some shrimp, small scallops, or small fish fillet for a great dish and a major protein punch.


Quick Marinara Sauce
Gina’s Weight Watcher Recipes

Servings: 6 • Serving Size: 1/2 cup • Old Points: 1 pt • Points+: 1 pt
Calories: 51.5 • Fat: 0.8 • Carbs: 9.0 g • Fiber: 1.1 • Protein: 0.1 g

  • 1 tsp olive oil
  • 2-3 large cloves garlic, smashed
  • 28 oz cans crushed tomatoes (I love Tuttorosso)
  • 1 small bay leaf
  • 1 tsp dried oregano
  • 2 tbsp chopped fresh basil
  • Salt and fresh pepper to taste

In a medium pot, heat olive oil over medium heat. Add garlic and saute until golden, careful not to burn. Add crushed tomatoes, salt, pepper, oregano, and bay leaf. Stir and reduce heat to low. Cover and let simmer about 15 – 20 minutes, add basil just before done.

Meatless Monday: TVP Meatloaf Muffins

Today is Meatless Mondays. Todays recipe is one I make for my family and that the kids LOVE.

This TVP Meatloaf Muffins recipe is based on a vegetable infused meatloaf I had at a friends years ago, but as I cannot eat meat any longer, I had to replace a few items. Making it in the muffin pan makes this delicious meal portion controlled and perfect for packing in lunches or for picnics.

*Note: Worcestershire Sauce has anchovies in it unless you purchase the vegan specific kind. We are actually pescatarian so regular Worcestershire Sauce is what I used.

*Warning, we like our food a little on the spicy side, you may want to use less cayenne or use mild diced tomatoes.

*Place 1 small cube of cheese (or flavored cheese curd works well too) into center of each meatloaf muffin before baking for a yummy, cheesy treat.

Meatless Monday is a non-profit public health initiative in association with the Johns Hopkins Bloomberg School of Public Health. Launched in 2003, the goal of Meatless Monday is to cut saturated fat intake, which in turn reduces the risk of chronic diseases such as diabetes, heart disease, stroke and cancer. Going meatless one day a week can also decrease our carbon footprint and save precious resources like fresh water and fossil fuel.

Rory’s at the club and just found his fanged quarry…

“Rory, sir.” Looking up from under my lashes, I smiled and arched into the male’s touch as I asked, “And you are?”

With the quirk of a small smile, he leaned down to whisper in my ear, “I’m Lorccán, though I like the way sir sounds coming from your sweet lips.” Tracing the shell of my ear with a fingertip, he continued to purr, “Why don’t you accompany me outside, piscín.”

I hadn’t expected the vampire to have such an effect on me, not when I knew what he was, dammit. Not trusting my voice, I simply nodded my consent. Lorccán’s hand slid down to my waist and pulled me against his body, before he silently lead me outside. When we reached the club doors, Lorccán motioned to a young, human woman who headed toward us.

“Andy, my sweet, we’re leaving. Please, get the car.”

It was easy to see he was also an aberration, his eyes were a shocking teal. Only the Croí Nochta, the vampires that chose not to hunt and kill humans, retained their eye colour, all the killers had black-void eyes. The stranger stood next to me, body turned, so when I straightened, I was neatly tucked into his form.

The creature was tall—probably a good six-four—lean bodied with a nearly gaunt appearance to his face, which gave him an intense and captivating form. The stranger’s hair was a vibrant red, pulled back into a tail at his neck. He wore an ankle length, flared leather skirt and a lace-up, halter-style, tight leather top—obviously made for a male form. Somehow, it was exceedingly sexy and masculine.

“Mmm, who do we have here?” The aberration’s sensuous voice carried a subtle undercurrent of desire.

A warm shock surged through me as someone ran a hand up my arm. Even through the mesh I could feel the fingers, long and strong, but cool—strange in a place like this.

I knew no human’s touch could cause such a shock. I turned to find the owner of the roving fingers. The stranger trailed his agile digits up, over my shoulder to the back of my neck. I slowly raised my eyes to meet his, curious to see whose hand touched me in such a sensual yet possessive manner.

Wow! Definitely vampire.

Making the circuit a second time, I headed back to the bar. The hairs on my arms suddenly stood on end. I could feel eyes on me, and while that wasn’t unusual—especially in a club—this, I knew, was more than just some mortal ogling my backside.

Arriving back at the bar, I motioned to my empty pint then turned to face the crowd, and sought the one staring at me. After Chad poured me a fresh pint of ale, I turned to pick it up. That’s when things got interesting.

Today I’m sharing a little bit from Blood Bound, book 2 of the House Millar series. 

One Stubborn human and one reluctant vampire . . .
And an over-protective interloper?…

What my eyes finally settled on was as curious as it was unexpected. There was a man, a male vampire. He was about six-six. Straight, long dark hair pulled back in a ponytail with jade green eyes and a fierce snarl ripping from his throat. He was not moving forward, but he was also not dropping his attack stance. He looked as if he would’ve happily destroyed me but of all peculiar things, it seemed he wanted to kill me over having drunk from Declán? Lost! My poor brain was so broken . . .

“Who the hell are you and what do you mean attacking me in my territory? I would suggest you be very careful with your answer if you plan to still be in existence this time tomorrow.” I could hear the seething blood rage in my voice again but couldn’t seem to care right then. He was attacking us, trying to take me away from Declán! Somewhere in the deepest recesses of my mind I noted his eyes yet that detail only made this all the more confusing.

How many ways can a hearts true love be shared? After poisoning, near death attacks, consummated passions, and possible insanity visit Anya, Nicholas, and Declán they embark on their future. Or at least they try to. Jealousy can be a pain, in more ways than one.

Can Anya protect her lovers, find peace within herself, and lead the House Millar? With her loves and guards, Nicholas and Declán, she sets out to do just that. If only life, eternal life, were that easy.

Come take a walk with our loving family and witness the strange turns and twists as life, love, and passions collide with greed, politics, and evil.

“No! Not one of those,” came a strange, frantic voice a moment before I felt powerful hands grasping me, trying to throw me from Declán. Not the easiest thing since my legs were still wrapped around him, and he was still clutching me, moaning in the euphoria my bite had caused.

I let go of Declán, spinning quickly to address the attacker – obviously not one of our friends given the words. Dropping into a defensive stance in front of Declán, with a slight growl slipping out, I screamed, “Stop!” Desperately looking around to make sure there was only the one attacker.

My combat and voice abilities were lethal, my tracking ability however . . . Sigh.

How many ways can a hearts true love be shared? After poisoning, near death attacks, consummated passions, and possible insanity visit Anya, Nicholas, and Declán they embark on their future. Or at least they try to. Jealousy can be a pain, in more ways than one.

Can Anya protect her lovers, find peace within herself, and lead the House Millar? With her loves and guards, Nicholas and Declán, she sets out to do just that. If only life, eternal life, were that easy.

Come take a walk with our loving family and witness the strange turns and twists as life, love, and passions collide with greed, politics, and evil.

No, no, no. This is too dangerous. I have to stop.

I pulled away from his luscious throat but he used the grip on my hair to stop me. I watched with a surreal fascination as he pressed some strange metal object – it looked vaguely like a curved, sharpened thimble – into the flesh of his own neck and pulled me back to his neck.

What the hell . . . Oh Gods.

With a sudden gasp, I lost control. The moment his blood touched my tongue that strange ecstasy filled me again. This elixir, intoxicating and luscious, drove me into a frenzied euphoria, my body singing in delight. It was pure rapture as all of me delighted in the gift of his existence.

It was over so soon, almost too soon, as I was able to still keep my mind restrained, thankfully. I started to pull away, nicking my tongue and teasing lightly over the wounds with my blood – no need for him to hold the wounds.

“Why did you–”
